Dairy Free Favourites So Far

Since I cannot have any dairy products I am always in search of recipes to make the things I use to eat with dairy in them, dairy free. Here are a few that I am in love with!

Easy Gluten and Dairy Free Whipped Cream -

2 cans of coconut milk full fat

1 cup powdered sugar

Place your cans of coconut milk in the refrigerator for a minimum of 24 hours.  The longer the better.  So when you bring them home from the grocery store just tuck two into the ice box for when you need emergency whipped cream.

Also, place your bowl and whip into the freezer for at least 3 hours to chill.  I use my son’s Kitchen Aid mixer with the balloon whip.

Once you take your bowl and whip out of the freezer and set up the mixer do not waste time.  You need to keep the equipment cold.  Open the cans at the bottom with a bottle opener to drain off the coconut water.  Save this it is great for smoothies.  Now open the top of the can all the way and scoop out the thick cream.

Start your mixer on low and move up 1 or 2 notches for speed until you get to moderate.  As it starts to whip and increase in volume, gradually add in the powdered sugar.  Once it’s mixed and looks fluffy like whipped cream, well you now have whipped cream.  Tip from J.C.- look for the beater to leave light traces on the surface of the cream.

Dairy Free Ranch Dressing -

  • 1 cup mayonnaise
  • 1 ½ teaspoons lemon juice
  • 7 ½ tablespoons soymilk
  • ½ teaspoon dried chives
  • ½ teaspoon dried parsley
  • ½ teaspoon dried dill weed
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 18; teaspoon salt
  • 18; teaspoon ground black pepper

  1. Mix lemon juice and soy milk and let sit for 10 minutes.

  2. In a large bowl, whisk together the mayonnaise, lemon juice and soy milk mixture, chives, parsley, dill, garlic powder, onion powder, salt and pepper.

  3. Cover and refrigerate for 30 minutes before serving.

Wordless Wednesday

Long time no blog, but I’m back!

Life has been very busy since I last blogged, but I am back and hope to blog a few times a week.

Today I am going to blog about the soup I am making, Split Pea Soup in the crock pot.

This is what it currently looks like and it smells delicious. I cannot wait for dinner tonight!

Here is the recipe for anyone interested:

Slow Cooker Split Pea Soup Recipe

Cook Time: 4 to 5 hours on high or 8 to 10 hours on low
Total Time: 4 to 10 hours
  • 1 (16 oz.) pkg. dried green split peas, rinsed
  • 1 meaty hambone, 2 ham hocks, or 2 cups diced ham
  • 3 carrots, peeled and sliced
  • 1/2 cup chopped onion
  • 2 ribs of celery plus leaves, chopped
  • 1 or 2 cloves of garlic, minced
  • 1 bay leaf
  • 1/4 cup fresh parsley, chopped, or 2 teaspoons dried parsley flakes
  • 1 tbsp. seasoned salt (or to taste)
  • 1/2 tsp. fresh pepper
  • 6 cups hot water

Layer ingredients in slow cooker in the order given; pour in water. Do not stir ingredients. Cover and cook on HIGH 4 to 5 hours or on low 8 to 10 hours until peas are very soft and ham falls off bone. Remove bones and bay leaf. Mash peas to thicken more, if desired. Serve garnished with croutons. Freezes well.
Serves 8.

I will post a picture once it is done!

Day 26, Why I love Jeff

Today I love Jeff because he will send me little email during the day when he is away from me to touch base or remind me of things I need to do.

Rose from Jeff

Thankful Thursday

Today I am thankful that my children napped at the same time, so I could join them and have a nap too.

What are you thankful for?

Day 25, Why I Love Jeff

I love Jeff because I put a coat hanger that needed gluing on this tool bench in the garage and meant to ask him to glue it and before I got a chance to ask him it was left on the kitchen table glued!

Long time no blog!

So I have slacked off on blogging lately. Sorry, life sort of took over and I just have not had the computer time to blog. I’m back now and hope to blog 3 to 4 times a week again!

Day 24, Why I love Jeff!

I love Jeff because he makes me want to be the best version of myself. He doesn’t always say it, but I know that he will always be cheering me on.

Thankful Thursday

Today I am thankful to the nurse at the walk in clinic who held a spot for us even though she isn't supposed to. Otherwise we would have been driving 45 minutes in the hopes of getting seen. I'm also thankful that we got seen today and I hope both children are feeling better soon.

What are you thankful for?

Day 23, Why I love Jeff!

I love Jeff because he will often do things he doesn’t necessarily want to do, but does them anyway because I ask him to.

Jefferson is 3 Months Old!

I cannot believe how quickly the last 3 months have gone by. It makes me sad that they have gone as quickly as they have because Jefferson may be our last child. Please slow down buddy you don’t need to grow up too quickly.

Jefferson 2 months old

Day 21, Why I love Jeff!

I love Jeff because he wants to make our house beautiful inside and out. We already have more landscaping done then our next door neighbours who have lived in their house since January!

Day 19, Why I love Jeff!

I love Jeff because every once and I while he will surprise me and do something really nice like letting me sleep in, or emptying the dishwasher.

Day 18, Why I love Jeff!

I love Jeff because he puts up with my need or keep things tidy and organized, most of the time.

Friday, August 26, 2011

Day 17, Why I love Jeff!

I love Jeff because he takes care of our families finances. This is not something that I am good at nor do I enjoy doing it, so he took it all over and does a great job!

Day 16, Why I love Jeff!

I love Jeff because he helped me create our beautiful loving children.

Thankful Thursday

Today I am thankful that we are alive and safe and that our house is still standing. On Tuesday evening we had severe thunderstorms and tornado warnings both at home and in Hamilton were the kids and I were visiting. We postponed going home and stayed at my Grammy’s. Its a good thing we did because we would have been driving through the storm!

What are you thankful for?

Day 15, Why I love Jeff!

I love Jeff because on days that he is away from home and he can call home to check in, he will. It will often just be to check on how the children and I are doing, but I find it super cute.
